[Homeroast] OT Gases, storage right after

If CO2 and Oxygen in  your fresh-roasted beans is mixed homogenously, which
of the two escapes faster if allowed to do so?  Or does CO2, which Tom and
Co. urge us to allow to "escape" really escape?  Of does air, Oxygen and
Nitrogen merel join the mix?  If so, is there actually less CO2 in the
resulting homogenous mix.?
