[Homeroast] Roast Length (was Behmor "Dying")

Assuming that one could get to the desired end state, what's the problem with slightly extended times?  If I understand correctly, some roasters happily describe their work as "slow-roasting".
 
Excluding "baking" the beans, what's the rush, otherwise?
