Hi, Claus,
 
Thanks for your post.
 
I checked with Joe Behm before purchasing my Behmor.  He was kind enough to try a fifth-pound roast, but said it took LONGER than he had expected. 
 
I do open the door a bit at first crack.
 
This weekend I'll give it another go.  
 
Still a work in progress.
