[Homeroast] Are there coffees that make good espresso withlittle rest?

+1 on the freeze after roasting. I'm splitting up my 1# batches and putting
some away in the freezer to pull and age as necessary.
Two weeks in Italy really put me in the hole as far as roasted coffee ready
to drink, but I'm starting to get back on track.
