Yes - I have sometimes been amazed with espresso  odds and ends I 
find with 2 weeks on them, toss them in the grinder, pull a shot, 
impressed. Things sometimes seem to "come into focus" in terms of 
flavor, clarity, sweetness etc, but as brewed coffee it would taste 
flat at 2 weeks...
